这座融汇中西文化的园区即将迎来一批专业的餐饮团队,他们或是通晓百果的农野大咖,或是经验资深的明星厨师,又或是享誉全国的餐饮顾问......
作为中山市阿丁莱幼儿园食堂的核心拼图,他们的加入将为幼儿打造一段独一无二的多元餐饮体验。孩子们日常的餐食中不仅仅将汇聚低糖低油版的糖醋排骨、银鱼蒸蛋等中国美食,更将融入牛羊排、意大利通心粉等他国特色。
此外,经验丰富的后厨团队将结合“健康、安全、透明”等关键词,为食堂制定出了一套体系成熟的标准作业程序(SOP)。从食材验收,到制作加工,再到清洁消毒,后厨团队将与园长、副园长、总务主任一同背负起孩子健康人生的重责。
食堂标准作业程序展示
一、准备工作
厨房工作人员需接受每日晨检,在完成个人消杀毒后佩戴“三白“(工作帽、长款工作服、口罩)进行上岗。同时,后厨团队还需在每日作业前检查水、电、燃气以及设备设施是否安全。
二、食材验收
经过供应商严选的食材将会根据其标签和合格证明文件由专人进行细致查验,以确保食材的质量和新鲜程度达标。
三、粗加工
在经过二次食材查验后,后厨团队将会对食材进行细致清洗并根据食物性质进行切配。
四、食材储存
将食材按照类别存储于食用级别的容器后贴上标签,并根据其性质决定常温、冷藏或冷冻保存。
五、食材烹饪
在再次查验食材后,厨师团队将结合营养顾问的专业意见和食材特点(形状、大小、烹饪工艺等)进行烹饪,并采用高温消毒后的容器进行封装。
六、试餐及留样
每一道菜都会留有厨师试餐环节,餐品将在厨师试吃30分钟后无异样的前提下送出。同时,针对每日不同的餐品,食堂都会进行至少三天的留样。
七、餐具消毒保洁
餐用具由专人在统一回收后进行集体清洗、沥干和消杀毒工作。
个性化营养食谱定制
托起幼儿成长每一步
为了制定符合幼儿生长发育所需的营养食谱,中山市阿丁莱幼儿园聘请了专业的营养团队进行每周食谱的修订。通过对膳食营养的精密计算和对幼儿成长特点的精准把控,营养师们将与后厨团队携手为幼儿打造一段“少油少盐、控糖限脂、营养多元”的健康体验。
除了在营养上的精益求精,食堂在供餐次数上也将采用多餐制度(即每日提供早餐、水果餐、午餐、下午茶)。食堂会在每日的不同阶段,为幼儿提供及时的能量补充,其中不乏高品质的水果、酸奶以及各类中西包点。
在餐食服务中,中山市阿丁莱幼儿园的食堂同样也展现出了更多的专业水准。暖心的食堂团队会根据不同幼儿的需求制定出特殊照料、特殊餐食等细则,以此来满足其成长道路上的个性化需求。其中包含但不限于:提供给幼儿的餐食将会去骨、切碎;对特殊体制的儿童提供无过敏源餐食等等。

As the central piece of the puzzle in the cafeteria of Ardingly College Zhongshan(Kindergarten), their addition will create a unique and diverse dining experience for the children. The children's daily meals will include not only traditional Chinese dishes such as sweet and sour pork and coconut chicken soup, but also other international specialities such as French lamb chops and rigatoni.
In addition, the experienced back-of-house team will develop a set of mature standard operating procedures(SOPs) for the canteen, combining key words such as "health, safety and transparency". From the acceptance of ingredients, to the production and processing, to the cleaning and disinfection, the back-of-house team will be responsible for the healthy lives of the children, together with the management team.
Demonstration of SOPs
1. Preparation
Kitchen staff are required to undergo daily morning checks and wear the "three whites" (work cap, long overalls and mask) after completing disinfection and their personal disinfection. The kitchen team is also required to check the safety of the water, electricity, gas, and equipment before the daily operation.
2. Acceptance of ingredients
Ingredients that have been carefully selected by our suppliers will be carefully checked against their labels and certification documents to ensure that the quality and freshness of the ingredients are up to standard.
3. Rough Processing
After a second inspection of the ingredients, the back of house team will carefully clean the ingredients and cut them according to the nature of the food.
4. Storage of ingredients
Store ingredients by category in food-grade containers and label them and store them at room temperature, refrigerated or frozen, depending on their nature.
5. Cooking of the ingredients
After checking the ingredients again, the team of chefs will cook them, taking into account the professional advice given by the nutritional consultant and the characteristics of the ingredients (shape, size, cooking process, etc.), and encapsulate them in heat-sterilised containers.
6. Tasting and sampling
Each dish will be tasted by the chef and served after a 30-minute tasting period. At the same time, the canteen will keep samples for at least three days for different meals each day.
7. Disinfection and cleaning of tableware
Tableware is washed, drained and disinfected in a group after collection by a dedicated person
Personalised Nutritional Recipes
In order to develop recipes that are highly in line with the growth trends of young children, Ardingly College Zhongshan(Kindergarten) has hired a professional nutrition team to revise the recipes on a weekly basis. Through precise calculation of dietary nutrition and accurate control of the growth characteristics of children, the nutritionists will work together with the kitchen team to create a healthy experience for children with "less oil and salt, controlled sugar and limited fat, and diversified nutrition".
In addition to nutritional excellence, the canteen will also adopt a multi-meal system in terms of the number of meals served (i.e. breakfast, morning snack, lunch and afternoon snack will be provided daily). The canteen will provide children with timely energy supplements at different stages of the day, including high-quality fruit, yoghurt, nuts and a variety of Chinese and Western buns.
The canteen at Ardingly College Zhongshan(Kindergarten) also shows a more "human touch" in its care services. The warm-hearted canteen team will develop special care and special meals to meet the individual needs of each child as they grow up. These include, but are not limited to, bone-in, split meals, allergen-free meals for children with special needs, dairy-free meals, etc.

At Ardingly College Zhongshan(Kindergarten), the children's dining environment will not be limited to the classroom, as the open central dining hall will be the preferred dining venue for all kinds of campus activities and parties. With its large space and ample light, it will be a great place for early personal socialisation, where children will not only be free to find partners with similar interests, but will also be able to take advantage of the large environment to enhance their personal social skills such as confidence, optimism and respect.
With long Western-style tables and Chinese bowls, every corner of the canteen epitomises the blending of Eastern and Western dining cultures. During these short years, the Central Canteen will give the children the opportunity to savour the diversity of cultures, as well as the art of dining and table manners. By the time the children head off to their future primary school life, they will be able to be familiar with all types of tableware and more than just Chinese and Western dining culture, but also with a variety of qualities such as intellectuality, elegance and gentlemanliness.
